Joining hull sections with double bulkheads and bolts or hinges (composite, included in the infusion) is no problem.  Nor is two piece masts.  

Turning a lee hull into a trailer is pretty simple.  A detachable tow bar moulded over the end of the hull and secured with lines back to the beam holes and a set of wheels lashed on to the other set of beam holes.  Probably work best f the hull was on it's side so the rear end was higher off the ground.    Cradle on top for the other hull and spars.  Building it is easy.  getting it legal probably not so much.

I remember how heavy the hulls of Sidecar were when moving then around at the boat yard and would not be very easy to put itg together.
But it was strip planked, 400glass, no vacuum, extended, added to, altered. So probably could have been about half the weight it was.
But a bit bigger than El size will be more.
Maybe the cockpit/deck could be a seperate piece, so ww hull is not so bad.
Maybe lw hull could have 2 or 3 sections. Don't know how to join up though.
