If you are ONLY using fiberglass... you should be OK with non-epoxies.  But, if you are planning on using ANY carbon or if you care to flirt with using the Lord Lindsay (LL) technique for an ultra low weight structure, you really need the extra strain that epoxy provides.  Otherwise the high strains the carbon or poly-clothes (LL) can take will fracture the poly/vinylester resin to pieces... resulting in bad osmosis problems at the very least and leaks and structural failures at the worst.  Also, the fiber finishing (Silane, Volan, etc) on the fiberglass or carbon must be compatible with your resin or you won't get good bond between fibers and resin.  Commonly... carbon won't even "stick" to poly/vinyles.
 
Caveat to the above - My knowledge may be quite old... it seems like I've heard that some recent high-quality vinylesters are approaching epoxies in strain limits.  But I also heard their prices were also approaching the epoxies.

I am not sure if it helps, but I have been playing with the Hydropel ro15 vinylester resin. That runs about $40/gal in single gallon quantities, if I recall.I don't know the viscosity offhand, but it is very thin and works much easier for infusion than the epoxy resins I have tried. The only infusion specific epoxy resins I have seen are way too expensive for me.

In the small quantities I use (so far) a kit is about $69 for 1.5 Gal (5.7 Liters).  This epoxy is not labeled for Infusion.  The resin has a viscosity of 600 cps.  The hardener has a lower viscosity, but I haven't been able to get a number from them.  Depending on which hardener, the pot life can be up to 30-35 minutes at 80F (27C).  It does not require an elevated post cure.

 

I just checked MAS which is marketed as an Infusion epoxy.  It also has a viscosity of 600 cps for the resin and 250 for the hardener.  Which seems to be the same... except their price seems closer to $180 for the same 1.5 Gal kit.

 

Does anyone have anything... of lower viscosity or generally easier to use for infusion and/or lower cost?
